Farming attacks and attacks that will regularly get 2 or 3 stars are more or less mutually exclusive. the farming attack at th11+ is sneaky gobs and jump spells. In terms of defenses, there are kind of two goals: one is to be impossible for a TH10 to 3 star, and another is to be hard for another TH11 (including rushed ones) to 3 star. Going slow on your defense upgrades is not going to help get you out of TH10 land very quickly.
